Spicy Duck Stir-Fry with Peanuts

This is a quick and easy recipe that’s great on a cold day after being in the blind all morning. It’s got a little bit of a kick too. Happy Noodle!


1 large wild duck breast or 2 smaller wild duck breasts, skinned and boned


  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon cornstarch


  • ¼ cup chicken broth or water
  • 2 tablespoons soy sauce
  • 1 tablespoon sherry
  • 2 teaspoons red wine vinegar
  • 1 teaspoon cornstarch
  • 1 teaspoon sugar
  • ½ teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 tablespoons minced fresh gingerroot
  • ¼ to ½ teaspoon crushed red pepper flakes
  • ½ cup salted peanuts
  • ¼ cup sliced green onions
  • Hot cooked rice

Cut duck breast into ¾-inch pieces. In small mixing bowl, blend all marinade ingredients. Add duck pieces. Stir to coat. Refrigerate 30 to 60 minutes.
In small mixing bowl, blend all sauce ingredients. Set aside. In wok or medium skillet, heat 2 tablespoons oil over medium-high heat. Add ginger-root and pepper flakes.

Stir-fry about 30 seconds. Add duck mixture. Stir-fry just until duck is firm. Add peanuts. Stir-fry until golden, about 45 seconds. Add sauce and green onions. Stir-fry until thickened and translucent. Serve with hot cooked rice.

Yield: 2-3 People

Time: 90 minutes
